Description

Refreshing watermelon skewers with zesty Tajín and crumbly Cotija cheese, perfect for summer gatherings.

Ingredients

  • Watermelon: 4 cups, cut into cubes
  • Tajín seasoning: 2 tablespoons
  • Fresh lime: 1, juiced
  • Cotija cheese: ½ cup, crumbled
  • Fresh mint (optional): for garnish

Instructions

  1. Prepare the Watermelon: Cut the watermelon into 1-inch cubes and place them in a bowl.
  2. Mix the Flavors: In a separate small bowl, combine Tajín and fresh lime juice. Add half of the Tajín mix to the watermelon and toss gently to coat.
  3. Skewer the Watermelon: Take skewers and thread the watermelon cubes onto them.
  4. Add Cotija: Once the skewers are assembled, sprinkle the crumbled Cotija cheese generously over the watermelon.
  5. Serve: Drizzle any remaining Tajín and lime juice mixture over the skewers for added flavor. Garnish with fresh mint if desired.

Notes

Skewers are best enjoyed fresh, ideally within 30 minutes of assembly. Choose firm, ripe watermelon for the best sweetness and crunch.
