Description

A vibrant dish with succulent salmon glazed in a sweet and zesty sauce, perfect for quick weeknight dinners or entertaining.

Ingredients

  • 2 salmon fillets
  • 1 cup pineapple slices (fresh or canned)
  • 1/4 cup pineapple juice
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon chili flakes
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together the pineapple juice, soy sauce, honey, chili flakes, salt, and pepper in a small bowl.
  3. Line a baking sheet with parchment paper and place the salmon fillets on it.
  4. Pour the prepared pineapple sauce over the salmon and place the pineapple slices on top.
  5. Drizzle everything lightly with olive oil.
  6. Bake in the preheated oven for 15-20 minutes until golden brown and flaky.
  7. Serve immediately, garnished with additional pineapple if desired.

Notes

For a vibrant flavor, opt for fresh pineapple. Use maple syrup for a vegan option or tamari for gluten-free. Add fresh herbs for a burst of freshness.
