Description

A refreshing salad combining juicy chicken, sweet corn, and crunchy cucumber in a creamy dressing, perfect for summer gatherings.

Ingredients

  • 2 cups grilled or roasted chicken, diced
  • 1 cup sweet corn, grilled or canned
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • Optional: crumbled feta cheese for garnish

Instructions

  1. Prepare the Chicken: If using grilled chicken, make sure it’s cooked thoroughly, diced, and ready to incorporate. If you’re using canned corn, drain it well.
  2. Mix the Base: In a large bowl, combine the diced chicken, corn, cucumber, and red onion. Toss these ingredients together gently to combine them evenly.
  3. Make the Dressing: In a separate bowl, whisk together mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper. Mix until it’s smooth and well combined.
  4. Combine: Pour the dressing over the chicken and vegetable mixture. Toss again to coat everything evenly in the creamy dressing.
  5. Taste and Adjust: Take a moment to taste the salad. Adjust seasoning if needed by adding more salt, lime juice, or pepper.
  6. Chill: For best results, let the salad chill in the refrigerator for at least 30 minutes before serving.

Notes

Opt for fresh, in-season cucumbers and sweet corn for the best flavor. This salad is not recommended for freezing due to the texture of the cucumbers and dressing.
