A delightful dessert highlighting juicy peaches and ripe strawberries, topped with a crunchy oat and brown sugar crisp.
Ingredients
- 1/2 cup old-fashioned oats
- 1/2 cup brown sugar
- 2/3 cup all-purpose flour
- 1/3 cup salted butter (melted)
- 1/2 teaspoon cinnamon
- 2 1/2 cups peaches (peeled and sliced, about 3 peaches)
- 1 cup sliced strawberries
- 1/4 cup brown sugar
- 3 teaspoons cornstarch
- 1/3 cup water
- 1/8 teaspoon salt
- 1/2 teaspoon vanilla extract
Instructions
- Combine the oats, 1/2 cup brown sugar, flour, cinnamon, and melted butter in a medium bowl until crumbly.
- Spread half of the oat mixture into the bottom of a greased 9×9-inch baking pan.
- Top with the sliced peaches and strawberries.
- Cook the remaining 1/4 cup brown sugar, cornstarch, salt, and water in a small saucepan over medium-high heat until thickened, about 2 minutes, stirring constantly.
- Remove from heat and stir in the vanilla extract, then pour the syrup over the fruit in the baking pan.
- Sprinkle the remaining oat mixture over the top of the fruit.
- Bake in a preheated oven at 350°F (175°C) for 35 minutes.
- Broil for an additional 2-3 minutes for a crispy topping if desired, watching carefully to prevent burning.
Notes
Use fresh peaches and strawberries for the best flavor, but frozen fruits can be substituted. Brown sugar can be replaced with coconut sugar for a different flavor profile.
