Ingredients
- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup cream cheese (softened)
- 1/2 cup powdered sugar
- 1 cup fresh strawberries (diced)
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs, one at a time, then stir in the vanilla extract.
- Whisk together the flour, baking soda, and salt in a separate bowl. Gradually blend this dry mixture into the wet mixture until just combined.
- Combine cream cheese, powdered sugar, diced strawberries, and lemon juice in another bowl to create the cheesecake filling.
- Take a tablespoon of cookie dough, flatten it, and place a spoonful of cheesecake filling in the center. Fold and roll into a ball.
- Place the cookie balls on the baking sheet, leaving space between them.
- Bake for 10-12 minutes, or until golden brown.
- Cool slightly before transferring to a wire rack to cool completely.
