A delightful twist on classic banana bread featuring strawberries for a sweet and juicy flavor.
Ingredients
- 1/2 cup butter, melted and cooled (113g)
- 1/3 cup sour cream or plain Greek yogurt (77g)
- 1 egg
- 2 medium bananas, mashed (¾ cup) (80g)
- 1 teaspoon vanilla extract
- ½ cup brown sugar (110g)
- ¼ cup granulated white sugar (56g)
- 2 cups all-purpose flour (275g)
- ½ teaspoon salt
- 2½ teaspoons baking powder
- 1½ cups diced strawberries tossed in 3 tablespoons flour
- 2 tablespoons strawberries, mashed
- 1/2 teaspoon vanilla extract
- 1 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper for easy removal.
- Combine in a large mixing bowl the melted butter, sour cream (or Greek yogurt), egg, 2 mashed bananas, vanilla extract, brown sugar, and granulated sugar. Whisk everything until smooth, about 1 to 2 minutes.
- Add the flour, salt, and baking powder on top of the wet mixture. Gently mix until just combined; do not overmix.
- Fold in the strawberries that have been tossed in flour into the batter. The batter will be thick.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
- Mix the mashed strawberries with powdered sugar and remaining vanilla for the optional glaze, then drizzle over cooled bread.
