Ingredients
- 1/2 cup butter (softened, salted or unsalted)
- 2/3 cup brown sugar
- 1 egg (at room temperature)
- 1 tsp vanilla extract
- 1/4 tsp coconut extract
- 1 1/4 cup flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup shredded coconut (extra for topping)
- 1/3 cup white chocolate chips (mini if possible)
- 1/2 cup butter (at room temperature, for frosting)
- 1/2 tsp lime extract
- 1 1/2 cup powdered sugar
- 1 tbsp heavy cream (or milk)
- 2 tbsp lime juice
- Food coloring (optional)
- 2 tbsp white chocolate (for drizzling, melted)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper.
- Cream together the softened butter and brown sugar until smooth and creamy.
- Add the egg, vanilla extract, and coconut extract. Beat until fully combined.
- Whisk together the flour, baking powder, and salt in a separate bowl. Fold this into the wet ingredients.
- Fold in the shredded coconut and white chocolate chips gently.
- Pour the batter into the prepared pan, spreading it evenly. Bake for 15-16 minutes or until golden.
- Cool the bars completely in the pan before cutting.
- Beat the room-temperature butter for the frosting until creamy. Gradually add powdered sugar, lime extract, heavy cream, and lime juice.
- Spread the lime frosting over the cooled bars and drizzle with melted white chocolate.
