Description

A luxurious cream sauce featuring morel mushrooms, perfect for pasta, meat, or vegetables, capturing the essence of spring.


Ingredients

  • 8 oz morel mushrooms
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 1 shallot
  • 1 cup heavy cream
  • 1/2 cup broth (chicken or vegetable)
  • 1/4 cup Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat the butter and olive oil in a large skillet over medium heat until melted.
  2. Add the shallots and sauté for 2-3 minutes until they become translucent.
  3. Stir in the garlic and continue to cook for another minute until fragrant.
  4. Add the morel mushrooms to the skillet, cooking until they are tender and golden brown, about 5-7 minutes.
  5. Pour in the broth and bring the mixture to a gentle simmer. Let it reduce slightly for about 3 minutes.
  6. Lower the heat, then stir in the heavy cream. Let it simmer until the sauce thickens, around 4-5 minutes.
  7. Mix in the Parmesan cheese, allowing it to melt and integrate into the sauce.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley before serving.

Notes

Fresh morels are best, but dried morels can be used if rehydrated. Homemade broth enhances flavor, and Parmesan is recommended for richness.
