Description

Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 pound shrimp, peeled and deveined
  • 1 cup breadcrumbs
  • 1 avocado, sliced
  • Zesty sauce (made from mayonnaise, sriracha, and lime juice)
  • Soy sauce (for serving)
  • Sesame seeds (for garnish)
  • Chopped green onions (for garnish)


Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Cook the rice in a pot with water, bring to a boil, then simmer for 20 minutes and let sit for another 10 minutes.
  3. Flavor the rice by mixing rice vinegar, sugar, and salt, then stir into cooked rice and let cool.
  4. Cook the shrimp coated in breadcrumbs until golden brown, about 3-4 minutes per side.
  5. Assemble the stacks with layers: sushi rice, crispy shrimp, avocado, and zesty sauce.
  6. Garnish with sesame seeds and chopped green onions, serve with soy sauce.

Notes

Use short-grain sushi rice for the best texture. Fresh shrimp work wonders; frozen should be properly thawed. Consider panko for an extra crunch.
