Description

A classic Southern Potato Salad that combines tender potatoes, creamy mayonnaise, and crunchy vegetables for a perfect side dish.


Ingredients

  • 2 pounds Yukon gold or red potatoes
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 3 hard-boiled eggs, chopped
  • Salt and pepper, to taste
  • Paprika for garnish


Instructions

  1. Boil the potatoes in salted water for about 15-20 minutes until tender.
  2. Cool and chop the potatoes into bite-sized pieces.
  3. Prepare the dressing by mixing mayonnaise, Dijon mustard, celery, onion, and hard-boiled eggs.
  4. Combine the cooled potato pieces gently into the mayonnaise mixture.
  5. Season with salt and pepper to taste.
  6. Chill the salad for at least one hour before serving.
  7. Serve with a sprinkle of paprika on top for garnish.

Notes

For best results, chill the salad for at least an hour to allow flavors to meld. Variations include using plant-based mayo for a vegan option.
