Description

A delightful quick bread bursting with juicy peaches and hints of cinnamon, perfect for breakfast or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups diced fresh peaches (peeled)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9 x 5 inch loaf pan.
  2. In a large bowl, whisk together the flour, sugar, salt, baking powder, baking soda, and cinnamon until well combined.
  3. In another bowl, beat the eggs. Add the vegetable oil and vanilla extract, mixing until fully incorporated.
  4. Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Be careful not to overmix.
  5. Gently fold in the diced peaches, ensuring they are evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
