A comforting and wholesome quick bread made with grated zucchini, cheese, and herbs, perfect for snacks or as a side dish.
Ingredients
- 2 cups grated zucchini
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheese (e.g., cheddar or parmesan)
- 1/4 cup olive oil
- 1/4 cup honey or sugar
- 2 eggs
- 1 teaspoon dried herbs (e.g., thyme or oregano)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Combine the grated zucchini, both flours, baking soda, baking powder, salt, black pepper, and dried herbs in a large bowl. Mix well.
- Whisk together the olive oil, honey (or sugar), and eggs in a separate bowl until smooth.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined.
- Fold in the shredded cheese for an even distribution.
- Pour the batter into the prepared loaf pan, smoothing the top as needed.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
- Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
Freshly grated zucchini is best, but frozen can work if drained well. You can customize the flour ratios and cheese types to suit your preferences.
