Description

Comforting Roasted Dill Potatoes with golden, crispy edges and soft interiors, perfect as a side dish or a main delight.

Ingredients

  • 2 pounds small potatoes
  • 3 tablespoons butter, melted
  • 3 cloves garlic, minced
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse and cut the potatoes into halves or quarters based on size.
  3. Stir together the melted butter, minced garlic, chopped dill, salt, and pepper in a mixing bowl.
  4. Toss the potatoes in the bowl until they are fully coated with the mix.
  5. Spread the coated potatoes in a single layer on a baking sheet.
  6. Drizzle a bit of olive oil on top and roast in the oven for 25-30 minutes until they are golden brown and crispy.
  7. Serve warm, optionally garnished with extra dill.

Notes

Optional add-ins include a squeeze of lemon juice for extra flavor. For extra crispiness, soak the cut potatoes in cold water for 30 minutes before roasting.
