Irresistible Peach Crumb Bars with a buttery crumble topping and a sweet peach filling, perfect for sharing.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 4 cups fresh peaches, peeled and sliced
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Combine the flour, granulated sugar, brown sugar, salt, and baking powder in a mixing bowl.
- Cut in the softened butter until the mixture resembles coarse crumbs, then stir in the vanilla extract.
- Press half of this crumb mixture evenly into the bottom of the prepared baking dish to form a crust.
- Toss the sliced peaches with cornstarch, lemon juice, and cinnamon in a separate bowl until well coated. Spread the peach mixture over the crust.
- Crumble the remaining crumb mixture over the peaches, covering them evenly.
- Bake for 40-45 minutes or until the top is golden brown.
- Allow the bars to cool slightly before cutting into squares. Serve warm with a scoop of vanilla ice cream, if desired.
Notes
Keep an eye on the baking time; if the top starts to darken too quickly, cover it with foil. Let the bars cool completely for cleaner cuts.
