Description

A delightful blend of pan-seared salmon fillets over lemon-infused orzo, packed with nutrients and perfect for any occasion.


Ingredients

  • 2 Salmon fillets
  • 1 cup Orzo pasta
  • 2 cups Fresh spinach
  • ½ cup Parmesan cheese, grated
  • Juice of 1 Lemon
  • 2 tablespoons Olive oil
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Heat 2 tablespoons of olive oil in a skillet over medium heat.
  2. Season salmon fillets generously with salt and pepper.
  3. Carefully place the fillets in the skillet and sear until golden brown and cooked through, about 4-5 minutes on each side.
  4. Remove the fillets and set aside.
  5. Add 1 cup of orzo to the same skillet and toast it lightly for 1-2 minutes.
  6. Pour in 2 cups of water or broth and bring it to a boil.
  7. Reduce the heat and let it simmer until the orzo is tender, roughly 8-10 minutes.
  8. Stir in 2 cups of fresh spinach and cook until just wilted.
  9. Mix in the juice of one lemon and ½ cup of Parmesan cheese, stirring until blended and creamy.
  10. Serve the orzo mixture onto plates and top each with a perfectly pan-seared salmon fillet.

Notes

Freshness matters: Opt for fresh salmon fillets for the best flavor and texture. You can use either white or whole wheat orzo for a healthier option.
