Description
A hearty and comforting one-pot pasta dish with smoky sausage and creamy Cajun flavors, ready in under 30 minutes.
Ingredients
- 1 lb smoked sausage
- 12 oz penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 medium onion
- 1 bell pepper
- 3 cloves garlic
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp Cajun seasoning
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup grated Parmesan cheese for garnish
- 2 tbsp olive oil
Instructions
- In a large pot, heat 2 tbsp of olive oil over medium heat.
- Add sliced smoked sausage, diced onion, and bell pepper. Sauté until the sausage is browned and the veggies are tender, about 5-7 minutes.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Mix in the can of diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, salt, and pepper. Bring this mixture to a boil.
- Stir in uncooked penne pasta, cover, and lower the heat to simmer. Cook for 10-12 minutes, or until the pasta is tender, stirring occasionally.
- Once the pasta is perfectly cooked, remove from heat and fold in the grated Parmesan cheese until it melts into the sauce.
Notes
Fresh vegetables enhance flavor. You can substitute the sausage for turkey or chicken sausage for a lighter option. Adding spinach or kale can boost nutrition.
