Description

A comforting and convenient casserole that combines chicken, broccoli, and cheese over fluffy rice, all cooked in one pot.


Ingredients

  • 1.5 lbs chicken breasts, sliced into small, thin pieces
  • 1 yellow onion, diced
  • 4 garlic cloves, thinly sliced
  • 1 cup white rice, rinsed
  • 1 bag (or 5 cups) broccoli (frozen or fresh florets)
  • 1.5 cups three-cheese blend
  • 1/3 cup Parmesan cheese
  • 1/2 cup blended cottage cheese (optional)
  • 1 cup chicken bone broth
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1/4 cup parsley, chopped (for garnish)
  • Red pepper flakes (optional)


Instructions

  1. Heat 1 tablespoon of olive oil in an oven-safe large skillet over medium heat.
  2. Add the diced onion and sauté for 3-5 minutes until it becomes translucent. Add the garlic and cook until fragrant.
  3. Add the chicken pieces and sauté until cooked through, seasoning with salt, pepper, oregano, basil, and garlic powder.
  4. Stir in the bone broth and rice, bringing to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked.
  5. Add the broccoli, Parmesan cheese, and ½ cup of the shredded three-cheese blend (add cottage cheese if using). Cover and cook until the broccoli is tender and the cheese melts.
  6. Preheat the broiler. Sprinkle the remaining cheese on top, then broil for about 5 minutes until the cheese is bubbly and golden.
  7. Garnish with chopped parsley and serve hot. Enjoy!

Notes

Substitutions: You can use brown rice instead of white; just adjust the cooking time. Quality Tips: Fresh herbs provide a stronger flavor than dried, so consider using fresh if available. Optional Add-Ins: Add bell peppers or mushrooms for extra veggies.
