Description

A healthy and delicious mushroom and tofu stir-fry, perfect for busy weeknights and packed with protein.


Ingredients

  • 1 block of firm tofu, cubed
  • 2 cups of mushrooms, sliced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • 1 inch piece of ginger, grated
  • Mixed vegetables (e.g., bell peppers, broccoli, carrots)
  • Salt and pepper to taste


Instructions

  1. Press the tofu to squeeze out excess moisture. After about 15 minutes, cube the tofu into bite-sized pieces.
  2. Heat the olive oil in a large skillet or wok over medium-high heat.
  3. Add the cubed tofu to the pan and cook until golden brown and crispy on all sides.
  4. Toss in the sliced mushrooms and sauté for about 3-4 minutes, or until they begin to soften.
  5. Add the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  6. Pour in the soy sauce and add the mixed vegetables. Stir-fry everything together for about 5-7 minutes, until the vegetables are tender yet crisp.
  7. Season with salt and pepper to taste, then serve hot and enjoy your delicious creation!

Notes

For extra crispy tofu, consider using cornstarch before frying. This creates a beautiful golden crust. Feel free to get creative with your veggies and proteins!
