Ingredients
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together the all-purpose flour, whole wheat flour, sugar, baking soda, and salt until well combined.
- Whisk the applesauce, milk, vegetable oil, and vanilla extract until smooth and homogenous.
- Pour the wet mixture into the dry ingredients. Stir gently until just combined; be careful not to overmix.
- Fold in the mini chocolate chips gently, ensuring an even distribution throughout the batter.
- Fill the muffin cups about 2/3 full, allowing space for rising.
- Bake for 12-15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Allow cooling in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For a lighter muffin, you can use all-purpose flour exclusively. Unsweetened applesauce adds moisture without extra sugar; feel free to swap it with mashed banana for a different flavor. Use vegetable oil or melted coconut oil for a richer taste.
