Description

Delightful mango pancakes perfect for lazy weekend mornings, combining fresh mango with a fluffy pancake base.

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon melted butter
  • 1-2 ripe mangoes, sliced
  • Whipped cream, for topping

Instructions

  1. Whisk together the flour, sugar, and salt until well mixed.
  2. Blend the milk, eggs, and melted butter thoroughly in another bowl.
  3. Pour the wet ingredients into the dry mixture and stir gently until just combined; lumps are okay.
  4. Heat a non-stick skillet over medium heat.
  5. Pour in a ladle of batter, swirling it around to create a thin pancake.
  6. Cook for about 1-2 minutes until the edges look set and the bottom is golden brown.
  7. Flip the pancake and cook the other side until golden.
  8. Repeat with the remaining batter, adjusting the heat as needed.
  9. Serve warm, topped with fresh mango slices and a dollop of whipped cream.

Notes

For fluffier pancakes, let the batter rest for 5-10 minutes. Ensure the skillet is medium heat to avoid burning.
