Ingredients

- 2 cups cauliflower rice

- 1 tbsp taco seasoning
- Salt and pepper to taste

Instructions
- Preheat your oven to 350°F (175°C).
- Cook the ground meat in a skillet over medium heat until browned, then drain any excess fat.
- Add the chopped onion and minced garlic; sauté until the onion is translucent and fragrant.
- Stir in the cauliflower rice, diced tomatoes, taco seasoning, salt, and pepper. Mix well.
- Transfer the mixture into a greased casserole dish, spreading it evenly.
