Description

Delicious roasted potato bowls topped with seasoned ground beef, fresh salsa, and creamy avocado, perfect for busy weeknights or gatherings.


Ingredients

  • 4 medium potatoes
  • 1 pound ground beef
  • 1 cup corn (canned or frozen)
  • 1 cup fresh salsa
  • 1 cup shredded cheese (cheddar or a Mexican blend)
  • 1 avocado, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dice the potatoes into small cubes, about 1-inch in size.
  3. Toss them in a bowl with the olive oil, chili powder, cumin, salt, and pepper until evenly coated.
  4. Spread the seasoned potatoes on a baking sheet in a single layer.
  5. Roast them in the oven for 25-30 minutes until they are fork-tender and golden brown, stirring halfway through.
  6. Heat a skillet over medium heat and add the ground beef. Cook until browned, stirring frequently.
  7. Drain the excess fat and season the beef with salt, pepper, and additional chili powder if desired.
  8. Assemble the bowls by placing roasted potatoes, sautéed beef, corn, fresh salsa, shredded cheese, and sliced avocado.

Notes
