Description

A delightful twist on comfort food that combines crispy roasted potatoes with seasoned meat, fresh vegetables, and creamy avocado.


Ingredients

  • 2 large Potatoes (Russet or Yukon Gold)
  • 1 pound Ground beef or turkey
  • 2 tablespoons Olive oil
  • 2 tablespoons Taco seasoning
  • 1 cup Bell peppers, chopped
  • 1/2 cup Red onion, chopped
  • 1 Avocado, diced
  • 1/2 cup Sour cream
  • 1 cup Cheddar cheese, shredded
  • 1 cup Black beans, drained and rinsed
  • 1 cup Corn, drained
  • Fresh cilantro, for garnish


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cube the potatoes into bite-sized pieces. Toss them with olive oil and salt.
  3. Spread them out on a baking sheet in a single layer.
  4. Roast for 25-30 minutes, turning halfway through, until golden brown and crispy.
  5. Heat a skillet over medium heat and cook the ground meat until browned.
  6. Stir in taco seasoning with a splash of water until well combined.
  7. In the last 10 minutes of roasting, add chopped bell peppers and red onions to the baking sheet.
  8. Assemble the bowls with a base of crispy potatoes and top with cooked meat, black beans, corn, diced avocado, sour cream, cheddar cheese, and cilantro.
  9. Serve immediately and enjoy!

Notes

For a vegan option, use tofu or a meat substitute and skip the dairy. Substitute ground turkey for a leaner protein.
