Description

A creamy and satisfying potato salad loaded with sour cream, bacon, and cheese, perfect for picnics and potlucks.

Ingredients

  • 2 lbs potatoes
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup cooked and crumbled bacon
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and cool, then cut into bite-sized chunks.
  2. Prepare the dressing by combining sour cream and mayonnaise in a large bowl until smooth.
  3. Combine the potato chunks, shredded cheese, crumbled bacon, and chopped green onions in the bowl. Mix gently until well-coated.
  4. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes to let the flavors meld.
  6. Serve by giving the salad a gentle stir and enjoy!

Notes

Use Yukon Gold potatoes for a firmer texture. Allow chilling time for the best flavors.
