- 2 tablespoons fresh lemon juice
- 1/2 teaspoon vanilla extract
- 1/4 cup powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, baking powder, and salt in a bowl.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg, lemon zest, fresh lemon juice, and vanilla extract until well combined.
- Gradually mix in the dry ingredients until just combined, being careful not to over-mix.
- Chill the cookie dough in the refrigerator for 30 minutes.
- Roll the chilled dough into small balls, then coat each ball in powdered sugar until fully covered.
- Place the sugar-coated balls on a baking sheet lined with parchment paper, spaced apart.
