Ingredients

  • 1 cup cooked quinoa (or brown rice)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup diced cooked chicken breast (or firm tofu for a vegetarian option)
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (canned, frozen, or fresh)
  • ½ cup diced bell pepper
  • 1 avocado, diced (optional but recommended)
  • ¼ cup chopped fresh cilantro
  • Juice of 1 lime
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Prepare the base: In a large mixing bowl, combine the cooked quinoa (or brown rice) with the black beans, diced chicken (or tofu), diced bell pepper, cherry tomatoes, and corn.
