Description

Deliciously marinated chicken skewers grilled to perfection, infused with smoky flavors and a touch of sweetness.


Ingredients

  • 1 1/2 lbs. boneless, skinless chicken thighs
  • 2 tsp fresh ginger, finely grated
  • 2 tsp minced garlic
  • 3 tbsp low sodium soy sauce
  • 3 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tbsp gochujang
  • Chopped green onions (optional garnish)


Instructions

  1. Begin by cutting the chicken into 1 1/2-inch cubes and placing them in a large mixing bowl.
  2. In a separate small bowl, whisk together ginger, garlic, soy sauce, brown sugar, sesame oil, rice vinegar, and gochujang to create a flavorful marinade.
  3. Pour half of this marinade over the chicken, ensuring every piece is well-coated. Cover and refrigerate for at least 240 minutes, or up to overnight for optimal flavor.
  4. Reserve the remaining marinade in the fridge for later basting.
  5. Once marinated, thread the chicken onto skewers. Preheat your grill to medium heat.
  6. When the grill is hot, place the skewers on a lightly oiled grate.
  7. Turn the skewers every 3-4 minutes, cooking until the chicken reaches an internal temperature of 165°F, which should take about 20-30 minutes. Baste with the reserved marinade during the last few turns for extra flavor.
  8. Remove the skewers from the grill. Serve with chopped green onions, if desired, along with your choice of side dishes.

Notes

Gochujang adds heat and depth; adjust to taste. Fresh ingredients elevate the flavor. Marinating longer enhances flavor absorption.
