Ingredients
- 1 pound ground beef (85% lean)
- 1 onion, chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes (no added sugar)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro for garnish (optional)
- Avocado or sour cream for serving (optional)
Instructions
- In a large skillet over medium-high heat, add the ground beef. Cook until browned, breaking it apart with a spatula as it cooks.
- Once the beef is browned, drain excess fat if necessary. Add the chopped onion and bell pepper. Sauté until the vegetables are tender, about 3-5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the diced tomatoes (with their juice), chili powder, cumin, smoked paprika, salt, and pepper. Mix well and let it simmer for about 5 minutes.
- Sprinkle the shredded cheese over the top and cover the skillet. Allow it to cook for another 5 minutes until the cheese is melted and bubbly.
- Remove from heat and garnish with freshly chopped cilantro, if desired.
