Description

A comforting twist on classic meatloaf with a creamy jalapeño filling wrapped in crispy bacon, perfect for family dinners and gatherings.


Ingredients

  • 1 1/2 pounds ground beef
  • 1 cup breadcrumbs
  • 1 large egg
  • 1/2 cup cream cheese
  • 1/2 cup diced jalapeños
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 6-8 slices of bacon


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Blend together the ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper in a large bowl until well combined.
  3. Mix the cream cheese and diced jalapeños in a separate bowl until smooth.
  4. Shape half of the meat mixture into a loaf on a baking sheet.
  5. Spread the cream cheese mixture down the center of the loaf.
  6. Encase the cheese mixture with the remaining meat mixture, shaping it back into a loaf.
  7. Wrap the meatloaf in bacon, securing it with toothpicks if necessary.
  8. Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).
  9. Allow it to rest for 10 minutes before slicing and serving.

Notes

For a spicy kick, use fresh jalapeños. Substitute ground turkey or chicken for a leaner option.
