Description

A quick and satisfying meal featuring tender chicken in a luscious honey garlic sauce with vibrant vegetables.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Cut the chicken breasts into bite-sized pieces.
  2. Heat olive oil in a large pan over medium heat until shimmering.
  3. Add the chicken to the pan and sauté until golden brown and cooked through, about 5-7 minutes.
  4. Add minced garlic and ginger, stirring for about a minute until fragrant.
  5. Toss in your choice of vegetables and cook, stirring frequently, until tender but still crisp.
  6. Mix together honey and soy sauce in a small bowl. Pour this mixture over the chicken and veggies.
  7. Stir well to coat everything evenly and cook for a couple more minutes until the sauce thickens slightly.
  8. Season with salt and pepper to taste, adjusting as needed.
  9. Serve hot over rice or noodles.

Notes

For a spicy twist, add red pepper flakes. This recipe can be made gluten-free by using tamari instead of soy sauce.
