Delicious and simple chicken skewers marinated in a sweet and savory honey garlic glaze, perfect for grilling or baking.
Ingredients
- 1.5 pounds boneless skinless chicken thighs, cut into 1.5-inch cubes
- 1/4 cup pure honey
- 3 tablespoons low-sodium soy sauce
- 4 cloves garlic, freshly minced
- 2 tablespoons olive oil, divided
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon ground ginger
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 green onions, thinly sliced (for garnish)
- 1 tablespoon sesame seeds (for garnish)
- 8-10 wooden or metal skewers (if using wooden, soak in water for 30 minutes)
Instructions
- Prepare the Chicken: Cut the chicken thighs into uniform 1.5-inch cubes, trimming off any excess fat.
- Make the Marinade: In a medium bowl, whisk together honey, soy sauce, minced garlic, 1 tablespoon of olive oil, rice vinegar, sesame oil, ground ginger, black pepper, and optional red pepper flakes.
- Marinate the Chicken: Add the chicken cubes to the marinade, tossing to coat every piece. Cover and refrigerate for at least 15 minutes.
- Prepare the Skewers: Remove the chicken from the marinade, letting the excess drip off. Thread 5-6 pieces onto each skewer.
- Cooking: Preheat your grill to medium-high heat (400°F) or oven to 425°F.
- Time to Cook: Grill the skewers for about 4-5 minutes per side or bake for 12-15 minutes, flipping halfway through.
- Baste and Finish: During the last 2 minutes of cooking, brush the skewers with reserved marinade.
- Rest and Serve: Once cooked, let the skewers rest for 2-3 minutes before serving.
Notes
For uniform cooking, ensure chicken pieces are the same size. Marinate for at least 30 minutes for enhanced flavor.
