A delightful twist on classic banana bread, this crumb cake features a crunchy topping and moist banana flavor, perfect for breakfast, snack, or dessert.
Ingredients
- 3 ripe bananas
- 1/2 cup butter, melted
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup flour (for crumb topping)
- 1/2 teaspoon cinnamon
- 1/4 cup oats (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Mash the ripe bananas until smooth.
- Stir in the melted butter, sugar, eggs, and vanilla until everything is well combined.
- Whisk together baking soda, salt, and flour in another bowl.
- Gradually add the dry mixture to the banana mixture, stirring until just combined. Don’t overmix!
- Combine brown sugar, 1/2 cup flour, and cinnamon to make the crumb topping in a separate bowl.
- Sprinkle the crumb topping over the banana batter evenly.
- Bake for 30-35 minutes or until a toothpick comes out clean from the center.
- Allow to cool before serving.
Notes
For best results, use very ripe bananas and avoid overmixing the batter.
