Description

A sweet and creamy treat featuring grilled nectarines topped with honey ricotta, perfect for dessert or a light snack.


Ingredients

  • 4 fresh nectarines, ripe but firm, halved and pitted
  • 1 cup (8 oz) whole milk ricotta cheese
  • 2 tablespoons honey (raw or wildflower)
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon olive oil, for brushing
  • Pinch of sea salt
  • Optional garnish: fresh mint leaves or toasted almonds


Instructions

  1. Preheat your grill to medium-high heat, about 375°F (190°C).
  2. Wash and halve the nectarines, carefully removing the pits.
  3. Brush each cut side lightly with olive oil to prevent sticking and enhance grilling.
  4. Combine the ricotta cheese, honey, and fresh lemon juice in a small bowl; stir until smooth and creamy.
  5. Place the nectarines cut side down on the grill grates. Grill for 3-4 minutes, until grill marks appear.
  6. Flip the nectarines carefully and grill the skin side for another 2 minutes to warm through.
  7. Remove the nectarines from the grill and let them cool for a minute or two.
  8. Spoon or pipe the honey ricotta mixture over each grilled nectarine half.
  9. Sprinkle a pinch of sea salt over the top to enhance flavors.
  10. Garnish with fresh mint leaves or toasted almonds if desired.
  11. Serve immediately and enjoy!

Notes

These grilled nectarines can also be served with ice cream or yogurt. They store well in the fridge for up to two days.
