Description

Delicious and flavorful chicken tenders marinated in Greek yogurt, lemon, and herbs, perfect for weeknight dinners or gatherings.


Ingredients

  • 1.5 lbs chicken tenders (or sliced chicken breast)
  • 1/2 cup plain Greek yogurt
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • 3 garlic cloves, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: 1/2 teaspoon ground cumin


Instructions

  1. In a mixing bowl, blend the Greek yogurt, olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and black pepper. Whisk until smooth and fully combined.
  2. Add the chicken tenders, ensuring they are generously coated in the marinade. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.
  3. Preheat your grill pan over medium heat or set your oven to 400°F (200°C).
  4. Remove the chicken from the marinade and discard any excess. Grill the chicken for about 5-7 minutes on each side, until golden brown and fully cooked. If using an oven, bake for 20-25 minutes.
  5. Let the chicken rest for a few minutes before serving, and garnish with fresh parsley or dill.
