Description

A comforting and flavorful chicken meatloaf with garlic and Parmesan, perfect for weeknight dinners or gatherings.


Ingredients

  • 2 lbs Ground Chicken
  • 1 cup Grated Parmesan Cheese (divided)
  • 1/2 cup Panko Breadcrumbs
  • 2 large Eggs
  • 4 cloves Garlic, minced
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Dried Basil
  • 1/2 teaspoon Dried Parsley
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Whole Milk
  • 3 tablespoons Unsalted Butter
  • 2 cloves Garlic, minced (for glaze)
  • 1/4 cup Grated Parmesan Cheese (for glaze)
  • 1 tablespoon Chopped Parsley (for glaze)
  • 1 pinch Salt (for glaze)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the ground chicken, half of the grated Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and milk in a large bowl.
  3. Mix thoroughly using your hands or a spatula until just combined—avoid overmixing.
  4. Transfer this mixture to a loaf pan, shaping it gently and smoothing the top.
  5. Melt the unsalted butter in a small saucepan over medium heat. Add the minced garlic and cook until fragrant, about one minute.
  6. Stir in the remaining Parmesan cheese, chopped parsley, and a pinch of salt.
  7. Brush the glaze generously over the meatloaf before placing it in the oven.
  8. Bake for approximately 60 minutes, or until it reaches an internal temperature of 165°F (75°C).
  9. Let it rest for 10 minutes before slicing.

Notes

Fresh herbs bring more flavor than dried. Substitute with gluten-free breadcrumbs if needed. Add chopped spinach or grated zucchini for extra nutrition.
