A gourmet dish featuring chicken breasts stuffed with a creamy mushroom and garlic filling, perfect for any occasion.
Ingredients
- 4 chicken breasts
- 1 cup mushrooms, chopped
- 1/2 cup cream cheese
- 1/4 cup grated parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup chopped parsley
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Heat a drizzle of olive oil in a skillet over medium heat and sauté minced garlic until fragrant, about 1 minute.
- Add the chopped mushrooms and cook until softened, about 5 minutes.
- Combine cooked mushrooms, cream cheese, parmesan, and parsley in a bowl. Season with salt and pepper.
- Cut pockets into the thickest side of each chicken breast, ensuring not to cut all the way through.
- Stuff each pocket with the mushroom mixture, pressing gently to fill completely.
- Season the outside of the chicken breasts with salt and pepper.
- Sear the stuffed chicken breasts in the same skillet for 3-4 minutes per side until golden brown.
- Transfer to a baking dish and bake for 20-25 minutes, until the internal temperature reaches 165°F (75°C).
- Serve warm and enjoy!
