Description

A vibrant and flavorful Whole30 Fish Taco Bowl featuring baked fish, fresh mango salsa, and spicy chipotle aioli, perfect for healthy weeknight meals.


Ingredients

  • White fish fillets (cod or tilapia)
  • Olive oil
  • Taco seasoning
  • Cauliflower rice
  • Mango (diced)
  • Red onion (diced)
  • Cilantro (chopped)
  • Lime juice
  • Chipotle aioli
  • Avocado (sliced)
  • Salt and pepper (to taste)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Coat the fish fillets with olive oil and sprinkle with taco seasoning; bake for 12-15 minutes.
  3. In a bowl, combine diced mango, red onion, cilantro, and lime juice to make the mango salsa.
  4. Add olive oil to a skillet and sauté cauliflower rice for 5-7 minutes until tender.
  5. In serving bowls, place cauliflower rice then top with baked fish, mango salsa, and avocado slices.
  6. Drizzle chipotle aioli on top and finish with salt and pepper to taste.

Notes

Use fresh fish for the best flavor. Frozen can work if thawed. Customize the salsa ingredients to your liking.
