Ingredients
- 1 pound chicken breast, diced
- 1 pound sausage (Andouille or your choice), sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup long-grain rice
- 2 cups chicken broth
- 2 teaspoons Cajun seasoning
- Salt and pepper to taste
- Green onions for garnish
- Olive oil
Instructions
- Heat a drizzle of olive oil over medium heat in a large pot.
- Add the diced chicken along with the sausage, cooking until both are golden brown.
- Stir in the chopped onion, bell pepper, celery, and minced garlic, and sauté until softened.
- Next, add the diced tomatoes (including all the juice), long-grain rice, chicken broth, and Cajun seasoning.
- Bring the mixture to a boil, then reduce the heat, cover the pot, and let it simmer.
- Cook for about 20 minutes, or until the rice is tender and the liquid has been absorbed.
- Season with salt and pepper to taste before removing it from heat.
- Garnish with chopped green onions for a pop of color and flavor before serving.
