Description

These golden, crunchy potatoes are the perfect side for any meal, combining crispy exteriors with fluffy interiors enhanced by garlic and topped with Parmesan cheese.


Ingredients

  • 1.5 pounds red potatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Place red potatoes in a large pot and cover them with water. Bring to a boil and cook for 15–20 minutes until fork-tender. Drain and let cool slightly.
  2. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Arrange each potato on the baking sheet and gently smash them flat using a glass or a potato masher until they are about 1/2 inch thick.
  4. Drizzle olive oil generously over each smashed potato. Sprinkle with minced garlic, salt, and black pepper.
  5. Top each smashed potato with grated Parmesan cheese for that extra layer of flavor.
  6. Bake for 25–30 minutes or until the potatoes are crispy and golden brown, checking for that lovely crunchy texture.
  7. Remove from the oven, garnish with chopped parsley, and serve hot.

Notes

Choose potatoes that are roughly the same size for even cooking. For extra crispiness, switch the oven to broil for the last 2–3 minutes of baking, but watch closely to prevent burning.
