Description

A comforting pasta dish made with fresh tomatoes and garlic in a creamy sauce, perfect for busy weeknights.


Ingredients

  • 8 oz spaghetti or fettuccine
  • 1 cup ripe tomatoes, diced
  • 1 cup heavy cream
  • 4 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil, chopped
  • Salt and pepper, to taste
  • Optional: Grated Parmesan for serving


Instructions

  1. Boil salted water in a large pot. Add your spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
  2. Heat the olive oil in a large skillet over medium heat. Add minced garlic and sauté until it’s golden brown and fragrant, about 1-2 minutes.
  3. Stir in the diced tomatoes and cook for another 3-4 minutes.
  4. Pour in the heavy cream, mixing well. Reduce the heat to low and let it simmer for 5 minutes until slightly thickened.
  5. Toss the cooked pasta into the skillet with the cream sauce. If it’s too thick, add a splash of the reserved pasta water.
  6. Stir in the fresh basil, and season with salt and pepper to taste.
  7. Plate up, top with grated Parmesan if desired, and enjoy!

Notes

Use fresh tomatoes for the best flavor. Optionally add grilled chicken or vegetables.
