Description

A quick and creamy Italian dish featuring gnocchi, fresh spinach, and feta cheese, perfect for weeknight dinners.

Ingredients

  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  1. Cook the gnocchi according to the package instructions until they float to the surface; drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  5. Pour in the heavy cream, bringing it to a gentle simmer.
  6. Add the crumbled feta cheese and stir until melted and creamy.
  7. Toss in the cooked gnocchi, ensuring they’re well coated with the sauce.
  8. Season with salt and pepper to taste.
  9. Serve warm, garnished with Parmesan cheese if desired.

Notes

Use fresh spinach for optimal flavor. For lighter version, substitute heavy cream with half-and-half. For dairy-free option, use coconut cream or cashew cream.
