Ingredients
- 1 lb shrimp (peeled and deveined)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp butter (divided)
- 4 cloves garlic (minced)
- 1/2 cup heavy cream or half-and-half
- 1/3 cup freshly grated Parmesan cheese
- 1 tsp lemon juice (optional)
- 2 cups cooked rice (white, brown, or cauliflower)
- Fresh parsley or green onion (for garnish)
Instructions
- In a bowl, season the shrimp with salt, black pepper, and paprika, ensuring each piece is coated.
- In a skillet, heat 1 tablespoon of butter over medium-high heat. Once hot, add the shrimp and sear for 2 to 3 minutes on each side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- Lower the heat to medium, adding the remaining tablespoon of butter. Sauté the minced garlic for about 1 minute, stirring constantly to avoid burning.
- Incorporate the heavy cream and Parmesan cheese, alongside the optional lemon juice. Stir and let this simmer gently for 2 to 3 minutes until the sauce thickens slightly.
- Return the shrimp to the skillet. Toss them gently to coat in the creamy sauce, heating for an additional 1 to 2 minutes until warmed through.
- Serve the shrimp and sauce generously over the cooked rice, garnished with fresh parsley or green onions for a pop of color.
Notes
Use fresh or frozen shrimp; freshly grated Parmesan offers better flavor. Consider adding spinach or sun-dried tomatoes for extra flavor.
