Description

This creamy dill pickle pasta salad is a vibrant, tangy dish that combines rich creaminess with a delightful crunch, making it perfect for gatherings or a cozy dinner.

Ingredients

  • 12 ounces of your favorite pasta (shells, rotini, or elbow)
  • 1 cup of diced dill pickles
  • 1 tablespoon of freshly chopped dill (or 1 teaspoon dried)
  • 1 cup of shredded cheddar cheese
  • ½ cup of mayonnaise
  • 1 tablespoon of yellow mustard
  • ¼ cup finely chopped red onion
  • Salt and pepper to taste

Instructions

  1. Cook the pasta by boiling water in a large pot. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cool water to stop cooking.
  2. Mix the cooled pasta with diced pickles, chopped dill, shredded cheese, and red onion in a large bowl.
  3. Prepare the dressing by whisking together mayo, mustard, salt, and pepper in a separate small bowl.
  4. Combine the dressing over the pasta mixture and stir until everything is well coated. Adjust seasoning as desired.
  5. Chill the salad by covering it and refrigerating for at least one hour to let the flavors meld together.

Notes

Consider adding cooked bacon bits or shredded rotisserie chicken for a protein kick. Store leftovers in an airtight container for up to 3 days.
