Ingredients
- 8 oz rotini pasta
- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 cup sweet corn, drained
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1 cup cheddar cheese, shredded
- 1/4 cup lime juice
- 1 packet taco seasoning
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Begin by cooking the rotini pasta according to the package instructions. Drain and set aside.
- In a skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess fat.
- Stir in the taco seasoning and lime juice with the cooked beef. Allow to cook for an additional 2-3 minutes.
- In a large bowl, combine the cooked pasta, seasoned beef, drained black beans, sweet corn, halved cherry tomatoes, diced bell pepper, diced red onion, and shredded cheddar cheese.
- Toss gently to mix everything together and season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
- For enhanced flavor, chill in the refrigerator for at least 30 minutes before serving if preferred.
