Description

A delightful blend of tender chicken, creamy coconut milk, and fragrant rice that wraps you in warmth.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can coconut milk
  • 1 tbsp soy sauce (or tamari)
  • 1 tsp lime juice
  • 2 cloves garlic
  • 1 tsp ginger
  • 2 cups cooked rice
  • 1 tbsp vegetable oil (or coconut oil)
  • Salt and pepper to taste
  • Fresh cilantro or green onions

Instructions

  1. Prep your ingredients: Cut the chicken into bite-sized pieces, mince the garlic and ginger, and squeeze lime juice.
  2. Cook the chicken: Heat vegetable oil in a skillet, add chicken, season with salt and pepper, and sauté until golden brown, about 5-7 minutes.
  3. Add garlic and ginger: Stir in the minced garlic and ginger, cooking for another minute until fragrant.
  4. Create the sauce: Pour in coconut milk, soy sauce, and lime juice. Stir well and let simmer, allowing the sauce to thicken slightly for about 5 minutes.
  5. Combine with rice: Serve chicken over your choice of cooked rice.
  6. Garnish: Add fresh cilantro or green onions for extra freshness.

Notes

Feel free to substitute the chicken with shrimp, tofu, or chickpeas as per your dietary preference. Fresh ingredients enhance flavor.
