Description

A comforting casserole that combines the vibrant flavors of fajitas with hearty cooked rice, perfect for busy weeknights and family gatherings.


Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 tablespoons fajita seasoning
  • 1 can black beans, drained and rinsed (optional)
  • 1 cup corn (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add the diced chicken, bell peppers, and onion. Season with fajita seasoning, salt, and pepper. Sauté until the chicken is fully cooked and the vegetables are tender, about 8-10 minutes.
  3. Combine the cooked rice with the chicken and vegetable mixture in a large mixing bowl. If using, add black beans and corn, mixing thoroughly.
  4. Transfer this mixture to a greased baking dish. Sprinkle the shredded cheese evenly on top.
  5. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  6. Allow the casserole to cool for a few minutes before serving.

Notes

Use fresh vegetables for the best flavor. You can substitute brown rice or quinoa for a different grain. Feel free to add more toppings like avocado or cilantro.
