Description

A wholesome and flavorful Chicken Burrito Bowl made easy with a slow cooker, perfect for busy weeknights or meal prep.


Ingredients

  • 2 chicken breasts
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 avocado, diced
  • Cilantro lime dressing
  • Salt and pepper to taste
  • Cooked rice or quinoa (optional)


Instructions

  1. Place the chicken breasts in your slow cooker and pour the salsa over the top.
  2. Add the drained black beans and corn into the cooker.
  3. Cook on low for 360 minutes or on high for 240 minutes, until the chicken is cooked through.
  4. Once done, use two forks to shred the chicken and mix the ingredients together in the slow cooker.
  5. If you like, serve the mixture over a bed of cooked rice or quinoa.
  6. Top your bowl with diced avocado and a drizzle of cilantro lime dressing for added flavor.

Notes

Fresh ingredients add more flavor, but canned beans work well and save time. Feel free to swap chicken for turkey or tofu for a vegetarian option.
