A warm and hearty slow cooker recipe perfect for busy weeknights or cozy weekends, full of rich flavors and tender textures.
Ingredients
- 1 ½ pounds of beef or chicken, trimmed and cut into bite-sized pieces
- 1 medium onion, chopped
- 2-3 cloves of garlic, minced
- 3 carrots, sliced
- 2 potatoes, cubed
- 4 cups of broth (beef or chicken)
- 1 can of diced tomatoes (14.5 ounces)
- 1 teaspoon of dried thyme
- 1 teaspoon of paprika
- Salt and pepper to taste
Instructions
- Prep the ingredients: Begin by chopping the onion, garlic, carrots, and potatoes. Set aside.
- Layer in the slow cooker: Start by placing the meat at the bottom of the slow cooker. Top it with the chopped vegetables.
- Add the liquids: Pour the diced tomatoes and broth over the meat and vegetables.
- Season: Sprinkle thyme, paprika, salt, and pepper evenly over the top.
- Cook low and slow: Cover and cook on low for 360 minutes or high for 240 minutes.
- Finish: Stir well before serving and adjust seasoning if necessary.
Notes
For a thicker sauce, mix a tablespoon of cornstarch with cold water and stir in during the last 30 minutes of cooking.
