- 8 oz spaghetti (fresh or dried)
- 4 cloves fresh garlic, minced
- ½ cup grated Parmesan cheese (plus extra for topping)
- 1 cup shredded mozzarella cheese
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the spaghetti: Start by bringing a large pot of salted water to a rolling boil. Add in the spaghetti and cook it for 8 to 10 minutes until al dente. Once done, drain the pasta, saving about ½ cup of the pasta water for later.
- Prepare the garlic sauce: In a large skillet, combine the unsalted butter and olive oil over medium heat. Once it’s hot, toss in the minced garlic and sauté for 1-2 minutes until fragrant and golden brown.
- Add cheese and pasta water: Lower the heat and stir in both the Parmesan and mozzarella cheeses. Keep stirring until the cheeses melt into a creamy sauce. Gradually mix in the reserved pasta water until the sauce reaches a consistency you love.
- Combine pasta and sauce: Toss the drained spaghetti in the skillet, ensuring every strand is coated in the cheesy garlic goodness. Adjust the seasoning with salt and pepper to taste.
- Serve: Plate the pasta creatively. For a beautiful finish, sprinkle with chopped fresh parsley and some extra Parmesan on top.
