Description

A delightful twist on Mexican street food, this Cauliflower Elote features roasted cauliflower dressed in smoky spices and topped with cheese and cilantro.


Ingredients

  • 1 head of cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • 1/2 cup crumbled feta or cotija cheese
  • Fresh cilantro for garnish


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cut the cauliflower into bite-sized florets and place them in a bowl.
  3. Drizzle the olive oil over the cauliflower, then sprinkle the chili powder, garlic powder, smoked paprika, salt, and pepper. Toss to ensure the florets are evenly coated.
  4. Spread the seasoned cauliflower on a baking sheet in a single layer, ensuring they are not overcrowded.
  5. Roast in the oven for 25-30 minutes, stirring halfway, until the cauliflower is golden brown and tender.
  6. Once they’re done roasting, remove from the oven and drizzle with fresh lime juice.

Notes

Fresh cilantro makes a significant difference in flavor. For a dairy-free option, use nutritional yeast instead of cheese.
